Those birds are just such a symbol of the US in my mind – didn’t they feature on a postage stamp many moons ago? Such an amazing colour.

I thought we might have another soup recipe — but if it were soup, it probably would have been something like cream of sunflower! They are beautiful birds, and probably my favorite against snow.
Tee-hee! Cream of sunflower. I have been craving a cream of mushroom soup. As my husband can’t eat much dairy, I was thinking of using cauliflower as a base and then adding the mushrooms when the soup is blended. Stay tuned.

Cardinals are one my favourite US birds. It’s good to see his colours shining out so brightly against the muted, snowy backdrop.
They are pretty against the snow. Cardinals are a relatively recent arrival in Maine. They have migrated from the South. When I was young, there were no cardinals in Maine.
Didn’t know that. We’ve seen them in various parts of eastern and central US over the years, but just assumed they’d always been there. Global warming, do you think, or just an evolutionary adaptation to the environmental conditions further north?
The jury is still out about why cardinals are migrating north, but I think global warming has a lot to do with it.
